A few weeks ago, Michael and I had the idea of making homemade pizza dough. We had all the ingredients except for one- yeast. Surprisingly, despite the amount of baking that goes on in this house…there wasn’t (and hasn’t been) a speck of yeast to be found.
Why? Because I’m lazy. Yeast takes time. Sure, it makes for some delicious loaves…but waiting to dig into that delicious bread should be limited to the cool-down time. Not an all day affair.
Granted, we’ve yet to make the dough.
So, it’s just been sitting there. An entire jar of perfectly good yeast waiting to be put into fluffy, sweet bread has been sitting in the cupboard totally untouched.
Until a few days ago when a sudden urge hit to use that poor neglected yeast. Lucky for it, I wanted bread. Warm, sweet whole wheat bread.
I grabbed that beautiful jar of yeast from the back of the cupboard, dusted it off…and put it right back.
Yeah, I’m lazy.
The idea of bread wasn’t forgotten, though. I still wanted bread. Just quick bread.
It’s still whole wheat. It’s still healthy, soft, warm, sweet, and simple. It still has all the qualities of whole wheat sandwich bread only it’s quick.
And while it may not taste as great used in a turkey sandwich as regular whole wheat bread would…I’m pretty sure you won’t find any loaves of sandwich bread laden with sweet shredded coconut.
And if you ask me, plain bread just can’t hold up to the perfectly delicious, sweet taste of a good quick bread.
So wait…we can have tasty, sweet, healthy bread with no waiting, no kneading, and no tedious work?
Well, well. Sometimes being lazy pays off.
Coconut Quick Bread
- 1.25 cup whole wheat flour
- 1/2 cup coconut flour (or a whole wheat/all purpose mix)
- 1/4 cup all purpose flour
- 1/2 tsp. baking soda
- 1 tsp. baking powder
- dash salt
- 3 T coconut oil (any oil or butter will work)
- 3 T brown sugar
- 1 T honey
- 2 eggs
- 1/4 cup milk
- 1/4 cup + 1 T yogurt
- 1 tsp. vanilla extract
- 1/4 shredded coconut
Preheat oven to 350°. In large bowl, combine flours, baking soda, baking powder, and salt.
In a separate bowl, melt coconut oil and beat with brown sugar and honey until well combined. Add the eggs one at a time, beating well between each mixture. Beat in the milk, yogurt, and vanilla. Fold in the shredded coconut into the wet mixture then slowly combine the wet and dry mixture, mixing until dough is thick and sticky.
Pour into prepared loaf pan, sprinkle with more coconut and a drizzle of honey.
Bake 25-30 minutes until a toothpick can be inserted in the middle of the loaf and come out clean.
While it’s baking, clean your mess of a kitchen.![]()

Oh, bread’s done!
Let cool for a few minutes in the pan then transfer to a wire wrack to cool completely.
Then, slice and enjoy.

That looks so good. I wanted to make homemade orange rolls this summer but it just takes so darn long with the yeast thing. quick bread is great.

Oh what a beautiful loaf – it looks fantastic! I prefer quick bread simply because I’m too intimidated to try working with yeast just yet. All the extra steps and time mean so much more could go wrong. I like it simple and… quick :D That being said, I’m pretty sure that the day I DO decide to try my hand at making yeast bread, I’ll never be able to go back to the store bought kind…
Exactly! No doubt homemade bread is SO much better than store bought..but that dang yeast is just so intimidating! Having to set everything up properly for the yeast to work right can get mind boggling..
and I LIKE MY COCONUT BREAD QUICK! hehe.. well who wouldn’t with the delightful coconut aroma that would fill the kitchen with this baking in the oven!

I like yeast bread mostly because I love kneading the dough. And I love how silky and elastic the dough becomes.

I prefer quick breads for sure!!! The last time I had to kneed bread with my sister I considered it my official upper body workout for the day :D. This coconut quick bread looks like it’s right down my alley. Can’t wait to try it!

Ive always wanted to try out bill grangers coconut bread, its been tempting me for YEARS! god knows why i havnt just made the dang thing, but yours i have to say looks like sheer perfection – just check the texture on that little gem of a loaf! Bet it tastes divinnnee :)

I just wanted to let you know that I stumbled across this recipe in the hunt for a coconut quick bread recipe and LOVED it! I subbed brown rice syrup for the brown sugar & honey and fudged the measurements slightly to account for the fact that I was using Australian cup measures but it was still great. I will be making this again, thanks!
